Easter Biscuits

Happy Easter Sunday!

This quick little Easter biscuit recipe is so easy, and makes the most delicious buttery, sugary biscuits – perfect if you’ve already over indulged on chocolate and are craving something a little different.


To make 12 biscuits, you will need:

  • 75g caster sugar (plus extra for sprinkling)
  • 200g plain flour
  • Pinch of salt
  • 100g butter
  • 1 egg (separated)
  • 50g currants
  • 1 tsp cinnamon
  • 1 tsp milk (if needed)

– Preheat the oven to 180c (fan)/200c and lightly grease your baking tray

– Cream together the sugar and eggs until light and fluffy, then beat in the egg yolk

– Sift the flour and stir in the cinnamon, currants and a pinch of salt

– Fold this into the egg mixture until it starts to form a soft dough

– Add a splash of milk if the dough isn’t sticking, and kneed lightly until the bowl is clean

– On a lightly floured surface, roll out the dough until thin

– Use a fluted cookie cutter to cut out the biscuits and gently lay on the baking tray

– Bake for 5 minutes, then remove from the oven, brush with the egg white and sprinkle with sugar. Bake for a further 3-5 minutes or until golden brown
